It's something I've always wondered as well. I figured it had some sort of golf connotation since a lot of their logo designs contain golf clubs, but I was never sure. I saw this thread and looked up the two words on wikipedia and discovered that a Niblick is a type of golfing iron and Henbane is a toxic herb with psychoactive properties that was used by some oracles.
That doesn't really explain why they chose that name, but it may just be one of those things where they liked the way the words sounded together.

Hey Josh,
Mike our original guitar player came-up with the name while watching Caddy Shack on acid one night. Hence the crossed golf clubs in the logo.

Niblick=heavy iron golf club
Henbane= a coarse,hairy foul smelling plant poisonous to human and avian life
