Vegetarian Chili Recipe

This actually works well as a dip too. I also made a sort of "regular" chili for a house full of friends that spent the weekend at the house.

I have HORRENDOUS gas tonight. The real thick and hot kind. It is epic.

Veggie Chili Recipe
1 Medium onion – chopped
¼ cup of diced cilantro
1 Red bell pepper – chopped
3 Tbsp chopped garlic
1 Tbsp cumin
1 Tbsp coriander
4 15 oz. cans of black beans
2 15.5 oz. cans of chili beans
1 16 oz. bag of frozen corn
1 28 oz. can of diced tomatoes
1 16 oz. jar of Picante sauce
*Saute onion, garlic, coriander and cumin in olive oil until onions are translucent.
*Pour onion mixture into crock pot and then add rest of ingredients
*Stir and cook

I likes da chili. THe veg chili is awesoem to make as you can eat so much more of it that its counterpart.

Went to check out a friend's new house yesterday and he served up some good veggie chili that left me blasting some massive bombs. I was contemplating places to get a gas mask after eating that.

Chili needs meat in my book... I have had some vegi chili and it was good, but not as good as it's "beefy" brother.

^Veg chili can be made "beefy" at least. It's all about throwing a good amount of soy crumbles in it.

I will be making this over the holidays.
I mentioned it to me woman, who does not partake in meat (just cause she don't like it, not for any mission statement like we find in the hc scene)
she mentioned the crumblers as well.
i will make sure to leave a window cracked....

You can also use this stuff as a good healthy dip vs. a chili.
