Ive got some interesting insight into this. I had to be put on a special diet about 10 years ago because I had chronic kidney failure. So I couldnt
eat foods high in potassium or phosphorus and I couldnt have lots of protien. Anyway... I couldnt eat corn because it was high in potassium, but I
could eat popcorn because it didnt have much.
So... there's something in the popping that takes lots of nutrients out.

the chemical reation when the kernals are heated makes the starch expand and explode hence the soft inside turing out and it becoming popcorn.
not a vegetable.

Popcorn's a vegetable... I think, however, that the difference between corn and popcorn lay primarily in that popcorn is of a different variety than
sweet corn AND the popping.
