Your idea sounds like New York Fries. Don't know if that's only a Canadian joint or if it in fact originated in New York. They fresh cut potatoes in
the store and you can get them in different varieties, such as chilli, cheese, the "works," gravy, poutine, etc. Great fucking fries.

NY Fries fucking rule. My absolute favorite fries. I just hate that I have to spet foot into a mall to get them.
