gas is easier
but charcoal has the taste.

I've got a smoker made out of 24" pipe with 1" walls (thing is un-Godly heavy) cemented into the ground out back. I've also got an ol' smokey for when I don't have all day to cook.
Cooking with wood (pecan or apple) is the best, hands down. Charcoal is ok if you don't have time for smoking. There's no excuse for gas unless you life in apartments or inner city.

I love the charcoal and the smokers. I have had gas the past 5 years because it is so easy.

I use my George Foreman 6 days a week and usually for 2 meals a day. It is the greatest thing ever.
