but charcoal has the taste.
we havent had anything but gas for the last 15 years

I've got a smoker made out of 24" pipe with 1" walls (thing is un-Godly heavy) cemented into the ground out back. I've also got an ol' smokey for when I don't have all day to cook.
Cooking with wood (pecan or apple) is the best, hands down. Charcoal is ok if you don't have time for smoking. There's no excuse for gas unless you life in apartments or inner city.

I have an old truck wheel w/ a piece of expanded metal that fits right inside the lip of the wheel. I know it sounds ghetto as hell, but let the wood burn down, put on the expanded metal, and throw on some meat. You can't beat that shit.

I love the charcoal and the smokers. I have had gas the past 5 years because it is so easy.

I use my George Foreman 6 days a week and usually for 2 meals a day. It is the greatest thing ever.
